yogurt dip
I saw this technique on the internet a while back and I finally tried it. You can basically condense yogurt by extracting a good portion of water out of it. I know this sounds complex, but all you have to do is put it in a strainer lined with cheese cloth (you can get cheese cloth at Bed Bath and Beyond in the Beyond section), and leave it in the fridge overnight. The longer you let it sit, the more firm it will become. You can even forgo the cheese cloth and put it directly in the strainer, but you might lose a little yogurt. This is basically what cheese makers do when making cheese.
The result is a condensed yogurt that acts like sour cream, so you can use it in a dip recipe that uses sour cream. If you let it get real firm, you can also make frosting out of it by adding a bit of sugar and jelly. I’m trying that next.
Greek style dip Recipe:
- 2 cups organic plain lowfat yogurt (strained overnight)
- 1/2 cucumber
- Juice of 1/2 lime
- 2 green onions
Let yogurt sit in fridge overnight to strain out water. Peel and finely dice cucumber. Finely chop green onions and juice lime. Combine with yogurt and eat.

I would recommend using unbleached cheese cloth, which is available at Jimbo’s or Whole Foods.
In general, yuogrt along with most all dairy products is not really recommended on the 4 hour body diet. The key thing is to make sure to get 30 grams of protein as soon as possible after waking up. This can come from a protein shake as a last resort but eggs usually lead to really good results. I would really recommend trying eggs for a few weeks and see what happens.
