coconut mango rice
I tried this coconut rice at a Thai restaurant the other day, and this is now my favorite healthy dessert. It’s really simple and it requires minimal ingredients.
- 1 cup white rice
- 3 cups coconut cream
- 1 cup water
- 1 mango
- Put 2 cups of coconut cream in a pot and simmer on low. This will reduce to a nice, thick, and sweet reduction.
- Rinse rice and add 1 cup coconut cream and 1 cup water
- Bring to boil and turn to low. Cook until done with the lid on. About 10-15 minutes
- Dice mango
- Allow coconut reduction to cool a bit before pouring on top of rice. Then add mango and eat.
Quick tip: Cut mango lengthwise along the sides of the seed. Then slice into small squares, and turn inside out to get perfect cubes.
