lentil salad
This is my version of a light lentil salad. You can serve this hot or cold, but I prefer it cold. Just add as much fresh herbs and veg as you can, and it will be good.
- 2 cups dried lentils
- 4 cups water
- 1 carrot
- 1 mild red pepper
- 3 scallions
- handful of cilantro
- handful of basil
- juice of 1 lime
- 2 tablespoons olive oil
- 1/2 cup yogurt
- Rinse lentils and add to water. Bring to boil and turn to low. Cook 10-12 minutes until done
- Rinse cooked lentils and let drain
- Finely chop peppers and scallions. Shred carrots. Rough chop cilantro and basil. Add to lentils and season with salt and pepper.
- Combine yogurt, olive oil, and lime juice in a separate bowl
- Drizzle yogurt sauce on top
- Garnish with lemon zest (citrus zest is very good for you, and it adds nice flavor)
