minh’s goji coconut cornbread
My friend Minh is an insanely good chef that creates dishes that aren’t just healthy but medicinal. I’ve learned so much from him over the last year. This is his unique recipe for cornbread. It is very healthy recipe and its actually one egg away from being vegan (if that’s what your into). One of the great super-foods he uses often is Goji berries. This super-food contains high concentrations of antioxidants, amino acids and essential fatty acids. They are hard to find, but are worth cooking with for the health benefits. This recipe also uses coconut oil instead of vegetable oil. Check out his website at minhslivingtree.com
Here is how to make it:
- 1 cup of cornmeal
- 1 cup of unbleached pastry flower
- 3/4 cup of shredded coconut
- 1/4 cup of palm sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking power
- 1/4 teaspoon sea salt
- 1/4 cup coconut oil (you can substitute vegetable oil)
- 1 c coconut milk
- 1 egg
- 1/3 cup Goji berries
Simply mix the dry ingredients first, and then mix the wet ingredients together in a seperate bowl. Then combine the wet and dry until silky smooth (like Zohan would say). The dough will seem thick, but don’t worry; the oven will make it all better. Put in cupcake molds and bake at 350 for 15 min. Shabam. You know have cornbread.
