lean healthy chili

Minh Nguyen can take any dish and transform it to the most healthy and delicious recipe. This is his rendition of chili using Bison because it is lean and full of protein. The key is to not cook the nonsense out of the vegetables so you don’t destroy all the nutrients. Chili doesn’t need to be cooked for hours. Check it out.

  • 1lb ground bison
  • 3 stalks of celery, diced
  • 3 carrots, diced
  • 1 cup of peas
  • 1 large sweet onion, diced
  • 4 cloves of garlic, minced
  • 3 stalks of green onions, diced
  • 2 cups of chopped tomatoes
  • 10 oz of tomato sauce
  • 10 oz of organic beef broth
  • 1 tsp cumin
  • 1 Tbs of chili powder
  • 1 tsp curry powder
  • 1/3 cup of chopped cilantro
  1. Sautee onions, garlic for 1-2 minutes and add ground bison in.
  2.  Add in all the spices to the meat and keep stirring until it is well mixed.
  3. Add tomato paste and sauce.
  4. Add the veggies one by one.
  5. Cook for about 15-20 minutes, and add broth to keep it from drying out.
  6. Serve on a base of arugula and top with green onions and raw cheese
