It’s summer squash time, so here is an awesome recipe for sweet summer squash as a side dish. My favorite kind are the little disc summer squash that look like a UFO. I had some last year that literally tasted like butter. This is a simple recipe that is hard to mess up.

Coconut Summer Squash Recipe:

  • 3 Summer Squash
  • 1/2 cup Coconut Cream
  • Fresh Thyme
  • Salt and Pepper

  1. Cut squash into quarters and put in hot pan with oil
  2. Sautee on med-high for a few minutes, then turn to low.
  3. Let cook for 10-15 minutes on low until they are very soft and flimsy
  4. Add coconut cream and thyme. Cook for 10 more minutes on low
