My friend Minh creates dishes using ingredients that aren’t just healthy, but are specifically combined for maximum nutritional value. I wanted to find a recipe that would be perfect for recovering after an intense workout, so I turned to Minh for his expertise. He made a Quinoa blend with vegetables topped with coconut chicken. Even though it was one of the highest nutritionally packed meals I’ve ever had, it was one of the best tasting dishes I’ve had in a while. Quinoa is considered a super-food and it is the only grain that is a complete protein. Do some research on it, and you can see all the other health benefits.

Here is the recipe:

  • 1 chicken breast
  • 1/4 cup Bragg amino acids (or soy sauce)
  • 1 cup quinoa
  • 2 cups chicken broth
  • 2 cups coconut milk
  • 1 red bell pepper, diced
  • 1/2 onion, diced
  • 2 cloves of garlic, minced
  • 3 Tablespoons Goji berries
  • 1 whole Lemongrass stick, minced
  • 1/3 cup of cherry tomatoes, in halves
  • 1/4 cup pine nuts

Here’s how it’s done:

  1. In a mortar and pestle (or food processor) combine the lemon grass, ginger, and garlic until you have a paste.
  2. Cut chicken into cubes and marinate in Bragg and 1/2 the paste
  3. Put on skewers and bake at 350 for 15 min. (or put on BBQ)
  4. Bring broth (or water) to boil and add quinoa. Bring back to boil and put on low to simmer until done (around 10 min).
  5. In a separate pot, combine coconut milk and the other half of the lemon grass paste and simmer on LOW for 10 min (This will reduce and be a sweet sauce)
  6. Add diced pepper, onion, tomatoes, pine nuts, and Goji berries to Quinoa after about 5 min.
  7. When everything is done, pile the Quinoa on a plate, top it with the chicken, and then pour the sauce on top. Done.
