I wanted to make a good snack that is super healthy with tons of good ingredients, so I came up with this recipe. This is gonna be perfect to eat throughout the day and when I go hike or bike. Make some – its easy and you can add whatever you want to make it to your liking.
Recipe:
- 1 cup almond meal
- 1/4 cup honey
- 1/4 cup molasses
- 1 tablespoon peanut butter
- 1/4 cup flax seed
- 1 cup toasted buckwheat
- 1/2 cup raisins
- 1/2 cup prunes
- 1/2 cup sunflower seeds
- 1/4 cup goji berries (or dried cranberries)
- 1 cup shaved coconut
- 1/2 cup black and white sesame
- 1 tablespoon cinnamon
- finely chop the prunes, raisins, goji berries, and coconut (you can use a food processor if you have one)
- Add the rest of the ingredients and mix (if it seems too sticky add more dry ingredients)
- Put clear wrap in a baking 9×9 inch baking dish
- Put mixture in and push everything until it is tightly compacted
- Cut into squares and dust with sesame seeds and almond meal so they aren’t so sticky
- Eat
looks delicious. I make bars less frequently than I eat them (I’m a chronic snacker), and that should change. I can’t wait to try your version!
