white fish pesto
Here is a sneak peak at one of the recipes for Minh’s book. This is a delicious pesto that goes perfect with any mild white fish. Try it.
- 4 white fish fillets (red snapper, cod, grouper, etc.)
- 1 cup basil
- 1/3 cup coconut oil
- 1/3 cup of raw sheep’s cheese
- 1 tsp fresh thyme
- 1/4 cup parsley
- 2 garlic cloves
- handful of sun dried tomatoes
- 2 small tomatoes
- sea salt and pepper
- In a food processor, blend basil, coconut oil, thyme, parsley, garlic and sun dried tomatoes
- Once blended, put in cheese chunks and blend slightly
- spread a portion on a hot griddle or pan and put fish on
- Slice tomatoes and add to griddle
- Spread pesto on fish and tomatoes
- Put on grill or in the oven and cook for 10-15 min until cooked through
