white fish pesto

Here is a sneak peak at one of the recipes for Minh’s book. This is a delicious pesto that goes perfect with any mild white fish. Try it.

  • 4 white fish fillets (red snapper, cod, grouper, etc.)
  • 1 cup basil
  • 1/3 cup coconut oil
  • 1/3 cup of raw sheep’s cheese
  • 1 tsp fresh thyme
  • 1/4 cup parsley
  • 2 garlic cloves
  • handful of sun dried tomatoes
  • 2 small tomatoes
  • sea salt and pepper
  1. In a food processor, blend basil, coconut oil, thyme, parsley, garlic and sun dried tomatoes
  2. Once blended, put in cheese chunks and blend slightly
  3. spread a portion on a hot griddle or pan and put fish on
  4. Slice tomatoes and add to griddle
  5. Spread pesto on fish and tomatoes
  6. Put on grill or in the oven and cook for 10-15 min until cooked through
